汉代煮茶 Han Dynasty Boiling Tea
汉魏六朝无制茶法及专门器具,直接采生叶于鼎、釜内煮饮,即煮茶法。煮茶法是将生叶直接入水烹煮,茶投冷、热水皆可,但需较长时间的煮熬。 There was no tea-making method or special utensils during the Han, Wei and Six Dynasties. People directly picked raw leaves and boiled them in pots and cauldrons, which is the method of making tea.
The method of boiling tea is to put the raw leaves directly into water. The tea can be boiled with cold or hot water, but it takes a longer time.

唐代煎茶 Tang Dynasty Frying Tea
唐代以后,人们开始用干茶煮饮。此时的煮茶法,是将茶饼烘烤后碾成粉末,在水刚开始沸腾时加入茶粉,并搅动使其煮沸。煮茶的程序包括:备具、择水、生火、候汤、炙茶、碾茶、罗茶、点茶(即投茶并搅拌)、分茶等步骤。在唐代,煮茶时已不再加入葱、姜、枣、橘皮、茱萸、薄荷等调味品,仅加入少量精盐以调和茶味。而在唐代晚期之后,煮茶时连盐也不再使用,转为一种完全清饮的方式。 After the Tang Dynasty, people began to boil dry tea and drink it.
The method of brewing tea is to use tea cakes, roast them, grind them into powder, add the powder into the water when it just starts to boil, and stir it around until it boils.
The procedures for making tea include preparing utensils, selecting water, lighting fire, waiting for the tea to boil, roasting the tea, grinding the tea, sifting the tea, brewing the tea (adding tea and stirring), and pouring the tea.
In the Tang Dynasty, seasonings such as onions, ginger, dates, orange peel, dogwood, and mint were no longer added when brewing tea. Only a small amount of refined salt was added to blend the flavor of the tea. After the late Tang Dynasty, salt was no longer added when brewing tea, and it became a completely plain drinking method.

宋代点茶 Song Dynasty Tea Making
点茶的方法:将茶叶研磨成细粉,放入茶盏中,注入沸水。先以少量沸水调成茶膏,再续水点茶,同时用茶筅击拂,使茶汤泛起泡沫。
点茶法盛行于宋元时期,后逐渐传播至辽、金等北方地区。此法由元代、明代初期继续沿用,但在明代晚期逐渐衰落,最终消失。 How to make tea: Grind the tea into fine powder, put it in a teacup, and pour boiling water into it. First, add a small amount of boiling water to make a paste, then add the tea and pour the soup, while whisking it with a tea basket.
The tea-making method was popular during the Song and Yuan dynasties, and spread northwards to the Liao and Jin dynasties. It was inherited by the Yuan and Ming dynasties, but died out in the late Ming dynasty.

明清泡茶 Ming and Qing Dynasties Brewing Tea
